Ingredients
1 kg (2 lb) mussels, cleaned and drained
15 ml (1 tbsp) butter
125 ml (1/2 cup) dry white wine
2 green onions
30 ml (2 tbsp) fresh chopped parsley
2 garlic cloves finely chopped
Juice of 1 lemon
Pepper to taste
Directions
- Chop parsley, green onions and garlic finely.
- In a large pot, melt half the butter and lightly fry the green onions.
- Add wine and bring to a boil, then add parsley and garlic.
- Add mussels and cook on high heat for 7-10 minutes.
- As soon as the meat falls from the shells, remove from heat and add the left over butter and the lemon juice.
- Stir gently and serve. Enjoy!
