Ingredients
12 oysters
½ cup ketchup
3 tbsp orange blossom honey
1 tbsp lemon juice
1 tbsp horseradish
1 tbsp Worcestershire sauce
1 garlic clove, minced
4 dashes hot sauce
Directions
- Carefully shuck the oysters to keep the natural sweetness and ocean flavours.
- Mix the remaining ingredients in a small bowl until fully incorporated.
- Presentation
- On a large platter, arrange the oysters in a circular pattern with the hinge side on the inside on a bed of salt. In the center circle, lay a small loose bunch of colourful greens then place a small bowl of cocktail sauce directly above. Around the edge of the platter, place lemon or lime wedges for garnish.
