Ingredients

  • 1 kg (2 lb) mussels, cleaned and drained

  • 15 ml (1 tbsp) butter

  • 125 ml (1/2 cup) dry white wine

  • 2 green onions

  • 30 ml (2 tbsp) fresh chopped parsley

  • 2 garlic cloves finely chopped

  • Juice of 1 lemon

  • Pepper to taste

Directions

  • Chop parsley, green onions and garlic finely.
  • In a large pot, melt half the butter and lightly fry the green onions.
  • Add wine and bring to a boil, then add parsley and garlic.
  • Add mussels and cook on high heat for 7-10 minutes.
  • As soon as the meat falls from the shells, remove from heat and add the left over butter and the lemon juice.
  • Stir gently and serve. Enjoy!
